Riscossa extra virgin olive oil is pressed from fresh olives harvested at exactly the right stage of ripeness. Its low acid and peroxide content guarentees easy digestibility and preserves, at length and unaltered, all the flavours. Its high smoke point allows to use it not only raw as a dressing, but also for frying. Its high content of essential polyunsaturated fatty acids makes it excellent for the diet and the prevention of cholesterol.
